Hooray For One Dish Dinners

This is a recipe that my friend, Rene, gave to me when I asked if she had any "one dish wonders" to feed a crowd. Because honestly, one 14 year old boy is a crowd.


It is so good, and looks and smells heavenly. The red sauce and the green spinach make it look really appealing. I love a dish that has the vegetable cooked right in! Add a salad and bread and whoot you're done!

Today I actually doubled the recipe. I have a 9x12 in my fridge for tonight, and two 9 inch pans ready to take to a friend. I feel so productive.

Baked Ziti with Spinach and Sausage

Ingredients

  • Salt
  • 1 pound ziti
  • 1 pound hot Italian turkey sausage, casing removed
  • 1 medium onion, chopped
  • cloves garlic, chopped
  • 1 (28-ounce) can diced tomatoes
  • 6 ounces pesto
  • 15 ounces ricotta cheese
  • 1 (9-ounce) package washed spinach
  • Butter, for baking dish
  • 2 cups shredded mozzarella, plus more for topping
  • 1 1/2 cups grated Parmesan, plus more for topping

Directions

Preheat oven to 375 degrees F.
Bring a large pot of salted water to a boil over high heat. Add ziti and cook until al dente. Drain in a colander.
In a large skillet over medium heat, saute turkey sausage. Add onion and garlic and saute until the sausage is cooked through. Use your spoon to break up the sausage while it cooks. Add the can of diced tomatoes and pesto and let simmer for 10 minutes.
Add the ricotta cheesespinach, Parmesan and mozzarella to a large bowl, and stir to combine.
Butter a 4-quart baking dish, add the cooked pasta, then sausage mixture and cheese mixture. Top with a sprinkling of mozzarella and Parmesan.
Bake until completely heated through and golden and crisp on top, about 20 minutes.

My general excitement level when it comes to preparing dinner is kind of low. Lately I've been focusing on quantity over quality-like it is more important to make 5-6 dinners a week that are okay than to make 3 really good meals but end up eating out the rest of the week. Why can't I make 5-6 great meals? Excellent question!

Last night I made a really scrumptious dinner though, and I am bursting to share; it's chicken tikka masala. I got this recipe from Katherine, the librarian at Ellie's school. She told me the ingredients and what to do with them, but no measurements. So here's what she told me-verbatim:

1. Saute the onions in butter until soft.
2. Broil the chicken rubbed with curry powder.
3. Add curry, chili powder,and a dash of ginger to the onions. Three parts curry to one part chili powder. Saute one minute.
4. Add one can of diced tomatoes with juice, chopped chicken, and half and half to the onions.
5. Simmer for twenty minutes and serve over Basmati rice.

Oh boy was this good! All my smalls liked it (except Ellie, she only eats white) and even went back for seconds.

I especially liked making this because I feel like an extra successful homemaker when I make foods from other countries and they come out well. Like if I make burgers, meh, who cares? But Chicken Tikka Masala...that's impressive.

Fishy Fish

"Fish smells like fish." That's Jonathan's reason for why he doesn't want to eat my fabulous baked salmon.

But last night I made This baked fish with shrimp and it went over really well. At first he said he was going to just have the noodles and green beans, but after smelling the (delicious) sauce for awhile he asked for a bite and then said, "Oh! I've gotta have some of that."


Seriously, I feel like a super momma when three out of four kids eat their fish and green beans and like it. Ellie doesn't count. She is my "get out of parenting responsibilities free" child because she is so difficult that I am going strait to Heaven just because she is still alive. DON'T judge me. Or at least be gentle.
* just so you know, although the fish looks creamy, I made it with fat free milk, a serving is only 310 calories. And it was still good, it tasted like cheating.
